Day two, level 2 of 30 Day Shred
I made a few new things for dinner the other night and thought I'd share.
First up, garlic roasted red potatoes. So simple. Garlic, butter, grated parmesan and potatoes in the oven for 30 minutes at 350. Easy peasy. Then I had some other veggies that needed to be used, so I cooked squash, zucchini, onions and red pepper in olive oil in the skillet.
And lastly, a partial fail, I made turkey bacon-wrapped scallops (recipe below)...but I accidentally bought the tiny bay scallops, so they were kind of a disaster, but they tasted good!
Scallops:
Cook 8 pieces of turkey bacon in skillet. Drain and set aside.
Brown scallops in skillet for a minute or two. Sprinkle with creole seasoning and lemon juice.
Wrap the scallops in bacon and bake in oven for about 5 minutes.
Voila!

Love the garlic roasted potatoes, definitely making those instead of regular boring baked potatoes!
