As I mentioned last week, Tuesdays and Thursdays are usually Crock Pot days since the husband gets home much earlier than I do. I had some zucchini and squash that needed to be used, so I found this recipe to try yesterday.
I was a little nervous about it...zucchini and squash in the Crock Pot? And then cooking noodles in the Crock Pot? Well, I gave it a try, and it was a big success! Next time, I'll be sure to add more seasoning like the recipe calls for, but I was in a hurry and didn't take the time to season it very well. The husband added the noodles when he got home and cooked it for the additional 20 minutes, and they were cooked just fine!
Here's what I changed about the recipe:
- I didn't have any tomato sauce, so I left that out
- I used 2 zucchinis and 2 squash
- I added a bit more water. I was scared it would dry out.
