Homemade Chicken Stir Fry

I was in the mood for something a little different yesterday, so I decided on some homemade chicken stir fry. Easy to make...tasty...and when made at home, it's pretty darn healthy.

Ingredients:
- 2 frozen chicken breasts, thawed and cut into cubes
- 1 packet of stir fry seasoning. I used this one.

Use as much or as little as these veggies as you want to. And cut them all up into small pieces:
- broccoli
- carrots
- red bell pepper
- sliced mushrooms
- celery
- onion
- water chesnuts

Instructions:
Prepare sauce per directions on back of packet. Brown chicken in a large skillet or wok. Add vegetables and stir fry for several minutes. Add sauce and stir fry until it thickens. Voila!
I served it with Uncle Ben's Long Grain and Wild Rice. Delish.

I love stir-fry....the hubs bought me an All Clad wok for Christmas and I have yet to use it.

You've inspired me to bust it out next week!
